The Simplest and Fluffiest Sourdough Cream Cheese Buns| Bake With Lucky Clover Decoration

These buns with lucky clover🍀 decorating were special bake for my son back to school breakfast box. He will sit for his IGCSE exam while the state Covid-19 cases still high. Good luck my dear!
Dough Ingredients
300g bread flour
100g sourdough starter
180g milk
40g sugar
1 tsp sea salt
50g cream cheese
25g unsalted butter
Make the Dough:
Put all ingredients (except cream cheese and butter) to mixer to knead for 10-15 minutes depending machine performance.
Added in cream cheese, knead fro 1-2 minutes, then add in butter. Continue knead for 5-10 minutes until reach windowpane stage.
(Time subject to individual mixer performance)
First Proofing 1.5 hours till 1.5x the size at room temperature, 27c
Divide to 9 equal portions
Pre-shape to ball size
Cover and rest for 15 minutes
Final shape
Cover
Proof for 3-4 hours 27c, until double in size.
Preheat oven at 170c for 20 mins
Sprinkle flour (can make stencil pattern)
Bake for 20-25 minutes at 170c. Cover with tray / aluminum after 10 minutes of baking to prevent surface turn brown
Transfer to wire rack to cool
